15:02 Fast Five Recipe -- Butter Sage Pasta from Exec Chef Tom Schmidt of Vintners Resort, John Ash & Co

Ingredients for 4 appetizer portions /2 main course

12 oz fresh pappardelle

4 oz butter

2 bunches fresh sage leaves, stems removed

3 oz grated Parmegiano reggiano

2 tsp. kosher salt

Directions

Have a large pot of lightly salted water boiling.

Put butter, sage leaves and salt on thick-bottomed saucepan. Turn to medium high heat. When butter is melted stir well and keep boiling and lightly stirring until butter starts to froth and turn light golden brown. Transfer butter immediately to a flat container to stop the browning process, if it gets too dark it will burn.

While the butter is browning, cook the pasta until al dente. Drain, put back in the pot, add sage butter and 1/2 the Parmesan, stir well and transfer to warm plates.

Divide remaining Parmesan on the top of the pasta, serve.
