Wine of the Day: 2022 Sparkling Rosé di Sangiovese 

Craig Colagrossi took time out of his very busy schedule (being a One-Man-Show at Colagrossi Wines) to chat with us about the goings-ons in his winery, in their little section of Windsor, and some of his favorite restaurants and dessert joints nearby! Of course, we enjoyed this chat over some very lovely wine, as well. :) Cheers, Craig!

Erin’s Argentinian Empenadas

24 masa dough rounds (they come frozen, and they’re easy to thaw!)
1lb lamb 
1-2lbs onions chopped
1 red pepper  - chopped
4 green onions - finely chopped
(Spices - Paprika, salt and pepper)

Brown meat with paprika, salt and pepper - remove from pan
Sauté onions and red pepper with paprika, salt and pepper 
Mix all cooked ingredients in a bowl and add green onions. Let it cool about 15 mins in fridge

Fill empanadas with cooled filling  
Heat Oven to 475 - Bake for 12 mins

Let it cool!!
